Immediately recognisable for his infectious and lovable nature, Aaron is a legend in the Irish bar scene. Since moving to London in 2015 to lead training and development across all London Cocktail Club venues, he has brought his uniquely warm hospitality and endless enthusiasm to bear on dozens of LCC bartenders.
Recently immortalised in the Dead Rabbit NYC drinks menu (right), Aaron's fifteeen year career includes Dublin's top venues such as The Clarence Hotel, Opium Bar, The Meeting House and The Exchequer, a venue very close to his heart, where he redirected the drinks program and breathed new life into education and development.
A spontaneous interaction with a group of guests saw him invited to work at Coolin Irish Pubs in Paris voted best international Irish Pub in the World by The Irish Times, where he took on the role of General Manager. One year later Aaron received an offer he couldn’t refuse; the chance to work under industry legend Alan Kavanagh at Balzac fine dining restaurant and cocktail bar. Here, stepping up the ranks, he was quickly thrust into the general manager role at these sister premises SamSara, the largest venue in the company.
In 2010, Aaron won the Irish heats of the prestigious 42 Below Cocktail World Cup, winning 1st place in the Modern Martini Challenge at the 42 Below Cocktail World Cup in New Zealand, placing 4th in the world overall. These achievements caught the eyes of global spirits’ giant Bacardi who recruited him as their Bacardi Brand Ambassador for Ireland, a role he thrived in for three years.
Aaron qualified as WSET (wine and spirits educational trust) Educator, being able to train the WSET Levels 1&2 spirits to an internationally recognised level.
